Korean Chicken & Potato Stew

Ingredients:

  • 2 1/2 lbs chicken thighs
  • 2 carrots , cut into 2-inch pieces
  • 1 onion , cut into 8 pieces lengthwise
  • 1/4 cup water
  • 1/2 cup soy sauce
  • 2 tbsp sugar
  • 1 -3 tbsp korean hot pepper paste (very spicy)

Directions:

  1. Place everything in pot. Bring to boil, reduce heat to low and simmer 45 minutes. You can brown the chicken first if you like.
