Ingredients:

  • 3 oz margarine or 3 oz butter
  • 2 tbsp golden syrup
  • 2 oz sugar
  • 2 oz flour
  • 1 1/2 tsp ground ginger
  • 1/2 tsp mixed spice
  • 1/2 tsp baking soda

Directions:

  1. Melt butter, golden syrup and sugar over low heat.
  2. Sift flour, ginger, and mixed spice into a bowl.
  3. Dissolve baking soda in a little water.
  4. Add to ingredients in saucepan.
  5. Mix wet ingredients with dry to form a dough.
  6. Cover bowl and leave at least 1 hour.
  7. Roll out thinly and cut into shapes (traditionally men on horseback).
  8. Bake in moderate oven about 15 minutes.
  9. When biscuits are cold decorate with lemon peel, icing and currants.
