Fried Eggs With Quesadillas And Pico

Ingredients:

  1. Add a little oil into a pan and cook your onion and garlic. Remove to a plate.
  2. Heat up your tortillas in the microwave about 20 seconds or until soft. Add cheese until it looks like a good amount on half the tortilla for each one. Add onion and garlic on top. Fold over and cook, I did it in a tiny bit of olive oil. Flip when it browns and crisps up a little.
  3. Fry the eggs in a little butter flipping after a little bit and make sure the whites are done but the yolk is still runny, salt and pepper them as well. Cut the quesadillas in half and stack 2 on top of each other...top with fried egg (I actually cut some of the white off to fit right) and then some pico! I used a knife and fork for these,,,,yum!!! Serve 2 stacks per person.
