  1. First, place the strips of bacon in a large pot set to medium-high heat. The bacon should then be cooked until it is crisp. Remove bacon from pot and place on paper towels to drain. All of the grease should then be drained from the pot leaving approximately 1 tablespoon for future use. Reduce heat to medium, and use the remaining tablespoon of grease to fry onions until tender. This should take approximately 5 minutes. Next add the potatoes to the pot. Fill the pot with enough water to cover the potatoes. Let boil and cook until the potatoes are just about tender. This should take approximately 5 minutes. Then add cubed fish pieces, butter, whole milk, and evaporated milk. Bring this to a boil and then let simmer over low heat for approximately 30 minutes. Season with salt and pepper (amount depends on your taste). Once complete, chowder should be served in individual bowls and topped off with bacon bits.
