Ingredients:

  1. Set aside 1tbsp oil; mix the rest with the shallots, feta and lemon juice. Stir in the chopped herbs, cover and chill until you're ready to eat.
  2. Peel back the husk of each corn on the cob and bunch it together at the base, tying with string – you can then use it as a handle to turn the corn over on the barbecue.
  3. Brush the corn with a little of the remaining olive oil and cook over medium-hot coals for about 5 minutes, using the direct method. Turn frequently, until cobs are lightly charred. Leave the husk attached so it can be used as a handle when you eat the corn. Serve immediately with the feta dressing spooned over
