Fennel Citrus Salad

Ingredients:

Directions:

  1. Dice all citrus.
  2. Thinly slice fennel (as fine as possible, i use a mandoline).
  3. Seperate witlof leaves.
  4. Place citrus fennel and creme fraiche in a mixing bowl and toss together.
  5. Place seperated witlof on plate.
  6. Set fennel/citrus mix on top of witlof, reserve juice from the mixing bowl.
  7. Place fish on salad.
  8. Dress fish with remaining juice.
