Egg Fried Rice

Ingredients:

  • 2 medium eggs
  • 1 medium onion
  • 1 clove garlic
  • 1 tsp olive oil
  • 1 dash of salt
  • 1 dash of pepper

Directions:

  1. Heat oil in a pan at medium heat
  2. Julienne the onion
  3. Mince garlic
  4. Sauté onion for a minute, then garlic
  5. Stir in eggs for under a minute
  6. Stir in rice, salt and pepper
  7. Let rice cooked for 5 minutes at low heat while stirring occassionally
  8. Serve hot with romaine lettuce
