  1. Combine vinegar and cherries in a jar; cover tightly. Let stand at room temperature 2 days.
  2. Pour vinaigrette into a small saucepan; bring just to a boil. Strain vinegar mixture through a sieve into a small bowl; discard solids. Cool completely. Pour vinegar into a jar; cover tightly, and store in a cool, dark place.
