Dill Mint Pilaf

Ingredients:

Directions:

  1. Stir onions, green onions, green peppercorns and pine nuts then cook until soft.
  2. Add rice and mint then stir 3 minutes.
  3. Add water and salt.
  4. Bring to boil and simmer on low for 20 minutes.
  5. Turn off and stir in half the dill.
  6. Cover top of the pot with a paper towel or a clean kitchen towel.
  7. Place lid on paper towel and let rice sit for at least 10 minutes before you serve.
  8. Scatter with remaining dill.
