Ingredients:

Directions:

  1. Preheat oven to 200 degrees.
  2. Mix together bread crumbs and cream and set aside.
  3. Mix together meat, spices, egg yolks,onions, and then the bread crumb mixture last.
  4. Roll 1 ounce balls and set on a wax paper lined sheet pan.
  5. Heat an electric skillet to 350 degrees and add the 3 tbl of clarified butter.
  6. In 2 batches brown the outside of the meat balls.
  7. Place onto a sheet pan and place into the oven.
  8. Saute onions and mushrooms in the drippings from the meatballs.
  9. Once onions are translucent, sprinkle with the flour to make a light roux.
  10. Add the 3 cups of beef stock.
  11. Stir in the heavy cream and the white pepper.
  12. Take the meatballs out of the oven and place them into the sauce in the electric skillet.
  13. Simmer for 10 minutes or until the sauce thickens.
  14. Serve.
