Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Dice onions.
  3. Finely chop garlic.
  4. Prepare pasta & cook for 2.5 minutes less than directions call for.
  5. Drain black beans & wash in a colander.
  6. Dice avocados.
  7. Heat burner on medium.
  8. Saute onions, until soft & slightly yellow.
  9. Add ground beef, 2-3 chipotle peppers and garlic.
  10. Sprinkle cumin, coriander and salt & pepper.
  11. Continue stirring until browned.
  12. Add green chilis and black beans, then stir.
  13. Drain juice from tomatoes & add to pan,.
  14. Mix everything thoroughly together.
  15. Spoon pan into 9x11 baking dish.
  16. Layer with olives.
  17. Sprinkle both cheeses evenly.
  18. Cover baking dish with tin foil.
  19. Cook for 30 minute.
  20. Remove tin foil & allow to cool.
  21. Serve with avocados & sour cream.
