Ingredients:

  • 1/2 cup water
  • 1/4 cup butter
  • 1/2 cup rice flour
  • 1/8 tsp salt
  • 2 eggs
  • 1 tsp parsley

Directions:

  1. In a saucepan, combine water and butter, cook till butter is melted.
  2. Add the flour, baking powder, and salt all at once, stirring vigorously. Cook stirring constantly, till mixture forms a ball that does not seperate.
  3. Remove from heat and cool slightly.
  4. Add the eggs one at a time, beating well after each addition. Stir in parsley.
  5. Drop dumplings by tablespoonfuls into hot soup. Cover and simmer 20 minutes.
