Ingredients:

Directions:

  1. In a medium bowl combine, flour, baking powder, baking soda, and salt; set aside.
  2. Beat sugar and butter in a large bowl until light and fluffy.
  3. Beat in egg until well blended.
  4. Add dry ingredients and orange juice to sugar mixture and mix well.
  5. Stir in cranberries, chopped nuts, and orange rind.
  6. Pour into well-greased 8-1/2 x 4-1/2 inch loaf pan.
  7. Bake at 350 for 50-55 minutes or until fork inserted into center comes out clean.
  8. Cool for 15 minutes.
  9. Serve and enjoy.
  10. Can be stored at room temperature or refrigerated.
