  1. Mix first 5 ingredients with electric mixer (medium speed) until fluffy. Add remaining dry ingredients in the order listed, stirring well with spatula.
  2. Dough should be very stiff, so add more Oats if necessary.
  3. Drop about 1/4 Cup of dough onto greased cookie sheet.
  4. Put only six or eight mounds of dough per sheet, staggering them about three inches apart.
  5. Cookies will spread as they bake. Bake in oven preheated to 350 degrees Fahrenheit for 10-15 minutes, or until cookies are golden brown but still spongy when touched on top with fingertips. (It can take up to 20 minutes sometimes, but don’t over bake.)
  6. Let the cookies cool slightly before removing them from cookie sheet, then finish cooling on racks.
  7. Makes about 20 big cookies, each about 4-5 inches in diameter. Cookies can be made smaller, but remember to reduce baking time accordingly.
