Ingredients:

  • 2 cups of canned or fresh corn
  • 1 egg
  • 3/4 tsp. salt
  • 1 and 1/2 cups flour

Directions:

  1. Drain 2 cups of canned corn - reserve the liquid
  2. Add milk to the liquid to make one cup
  3. Sift 1 and 1/2 cups flour, 2 tsp, baking powder, 3/4 tsp. salt
  4. In a separate bowl combine 1 egg beaten, milk mix, corn
  5. Add dry ingrediants and mix together
  6. Drop batter from a Tablespoon into a pot of hot oil
  7. When lightly brown, turn fritters over and brown the other side.
  8. Drain on paper towels and serve immediately
  9. Goes well with chicken or ham
