These corn fritters put KFC's to shame. They are easy to make and don't last long. Taste good even when they are cold. Ingredients:
2 cups of canned or fresh corn |
1 egg |
add milk to liquid from corn to make 1 cup |
3/4 tsp. salt |
2 tsp. baking powder |
1 and 1/2 cups flour |
Directions:
1. Drain 2 cups of canned corn - reserve the liquid 2. Add milk to the liquid to make one cup 3. Sift 1 and 1/2 cups flour, 2 tsp, baking powder, 3/4 tsp. salt 4. In a separate bowl combine 1 egg beaten, milk mix, corn 5. Add dry ingrediants and mix together 6. Drop batter from a Tablespoon into a pot of hot oil 7. When lightly brown, turn fritters over and brown the other side. 8. Drain on paper towels and serve immediately 9. Goes well with chicken or ham |
