Ingredients:

  • 1 cup flour
  • 2/3 cup cornmeal
  • 2 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp dry mustard
  • 2 tbsp shortening
  • 3/4 cup milk

Directions:

  1. Combine flour, cornmeal, sugar, baking powder, salt and dry mustard in a bowl.
  2. Cut in shortening until mixture resembles fine crumbs.
  3. Mix egg and milk.
  4. Add to dry ingredients.
  5. Mix well.
  6. Dry frankfurters well with paper towels (this allows the coating to stick better).
  7. Insert skewers into the end of the frankfurters.
  8. Pour oil into a skillet to a depth of 1 inch.
  9. Heat oil to 375 degrees.
  10. Coat franks with batter.
  11. (if batter is too thick, thin with a little milk).
  12. Arrange coated franks 3 at a time in hot oil.
  13. Turn franks with tongs after 10 seconds to prevent the batter from sliding off.
  14. Cook for 3 minutes, turning again 1/2 way through cooking time.
  15. Serve hot with catsup and mustard.
