Directions:

  1. Toast coconut by spreading on cookie sheet and bake at 350 for 5-7 min. Stir together flour, soda, baking powder and salt. Set aside. Using mixer beat butter and sugar until fluffy. Beat in egg, vanilla, lime juice and zest. Gradually add dry ingredients and coconut. Roll into balls and roll in sugar. Bake at 350 for 8-10 min. Let set for 2 min before removing.
