Cinnamon Swirl Bread

Ingredients:

  • 4 -4 1/2 cups flour
  • 1 tbsp dry yeast
  • 2 tsp salt
  • 2 1/2 tbsp sugar
  • 3 1/2 tbsp soft margarine
  • 1 1/3 cups hot water (120-130)
  • 1 -2 tsp cinnamon

Directions:

  1. Combined 1 1/2 cups of flour, undissolved yeast, 1 1/2 TBS sugar, and salt. Stir well.
  2. Stir in 3 TBS of soft Margarine.
  3. Add hot water all at once.
  4. Beat for 2 minutes. (If using an electric mixer remember to scrape sides of bowl occasionally).
  5. Add 1 cup of flour.
  6. Beat (at high speeds for mixer) until think and elastic(about 1 minute).
  7. Add enough flour(about 1 cup) to make a soft dough. (You will need a dough hook if you're using an electric mixer.
  8. Knead until elastic and smooth (about 5 minutes).
  9. Let rest of 5 minutes.
  10. Roll out to 1/2 inch think and as wide as your loaf pan.
  11. Spread 1/2 TBS margarine.
  12. Sprinkle evenly with 1 TBS sugar and Cinnamon.
  13. Roll to shape into a loaf. Place in a greased loaf pan seam down.
  14. Brush top of loaf with oil (or melted margarine) and sprinkle lightly with cinnamon.
  15. Refrigerate for at least 2 hours (can stay in fridge for as long as 48 hours).
  16. After removing loaf from fridge let rest for 20 minutes.
  17. Bake at 375 for 40 minutes.
  18. Let cool slightly on a wire rock.
