Cinna-Coco-Meal Cookies (Cinnamon Coconut Oatmeal)

Ingredients:

  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 1 1/2 cups butter (3 sticks) or 1 1/2 cups margarine (3 sticks)
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 2 cups quick oats

Directions:

  1. Preheat oven to 385 degrees.
  2. Spread oats and coconut on dry pan - cook until slightly crispy/brown. (shouldn't be more than 7 minutes so keep an eye on it.)
  3. In a large mixing bowl - use an electric mixer to mix the (softened) butter, sugar and brown sugar.
  4. Add eggs in one at a time then add the vanilla.
  5. In a separate bowl - mix together the flour, salt, baking soda, and cinnamon. Once mixed, pour into the egg+sugar batter and mix together.
  6. Lastly, pour the crispy coconut and oatmeal (make sure it has had time to cool down) into the mixture and mix with a large spoon.
  7. Makes about 20 large cookies.
