Looking for something different but just as delicious as the cookies your mother used to make? These are easy and perfect for any occasion. Ingredients:
1/2 cup sugar |
1/3 cup brown sugar |
1 1/2 cups butter (3 sticks) or 1 1/2 cups margarine (3 sticks) |
2 eggs |
1 1/2 teaspoons vanilla extract |
1 cup flour |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
2 teaspoons cinnamon |
2 cups shredded coconut (sweetened with sugar-if regular, add extra 1/4 cup sugar) |
2 cups quick oats |
Directions:
1. Preheat oven to 385 degrees. 2. Spread oats and coconut on dry pan - cook until slightly crispy/brown. (shouldn't be more than 7 minutes so keep an eye on it.) 3. In a large mixing bowl - use an electric mixer to mix the (softened) butter, sugar and brown sugar. 4. Add eggs in one at a time then add the vanilla. 5. In a separate bowl - mix together the flour, salt, baking soda, and cinnamon. Once mixed, pour into the egg+sugar batter and mix together. 6. Lastly, pour the crispy coconut and oatmeal (make sure it has had time to cool down) into the mixture and mix with a large spoon. 7. Makes about 20 large cookies. |
