Chocolate Cake With Chocolate Glaze

Ingredients:

  • 3/4 cup cocoa
  • 1 3/4 cups unsifted flour
  • 2 cups sugar
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/3 cup baking cocoa
  • 3 tbsp cornstarch
  • 1 cup water

Directions:

  1. For the cake: Preheat oven to 350 and spray a 9x13 inch cake pan with nonstick spray like Pam.
  2. Mix all ingredients except the boiling water together in a large bowl at medium speed for about 2 minutes or until well mixed, then add the boiling water and stir just until well blended. Pour into cake pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Let cool completely, then pour on the glaze.
  3. For the glaze: In a saucepan, combine the sugar, cocoa, cornstarch, and water until smooth. Bring to a boil over medium heat, stirring constantly. Cook and stir for 1-2 minutes or until thickened. Remove from heat and stir in the butter and vanilla until the glaze is smooth. Cool to lukewarm. Stir, then spread over top of the cake. Let stand until set. Refrigerate leftovers.
