Chinese New Year Wonton Soup

Ingredients:

Directions:

  1. Mince 3/4 cup of mushrooms.
  2. Slice the rest.
  3. Saute' ham in oil, drain on paper towel.
  4. Set aside 6 shrimp and finely chop the rest.
  5. Add minced mushrooms, onions, and soy sauce to the chopped shrimp.
  6. Mix to a paste consistency.
  7. Place mixture in the middle of the wonton skin.
  8. Brush water on 2 borders of the skin, covering 1/4 from the edge.
  9. Bring one end over to form a triangle.
  10. Seal edges.
  11. Pull the other 2 ends together to meet and overlap under filling.
  12. Moisten 1 end, pinch firmly.
  13. Bring chicken broth to a boil.
  14. Add wontons, sliced mushrooms, green onions.
  15. Simmer 10 minutes.
  16. Add reserved 6 shrimp and spinach.
  17. Cook until spinach wilts.
  18. Top with ham strips.
