Chicken Tortilla Soup (3 Pts)

Ingredients:

  • 1 tbsp olive oil
  • 2 large onions
  • 8 garlic cloves
  • 1 tbsp salt
  • 1 tsp cumin
  • 12 cups chicken broth
  • 2 tbsp lime juice
  • 1 cup cilantro
  • 1 cup corn
  • 1/2 cup cheese
  • 1/2 avocado

Directions:

  1. Marinate: Blocked chicken with 1 juice of lime, 1/3 amount of garlic - for 15 minutes
  2. Saute onions, 2/3 amount of garlic
  3. Add: salt, cumin and chili flakes
  4. Add: broth, tomatoes and half the lime juice and simmer for 20 minutes
  5. Puree soup in batches in a blender, return to pot, add chicken and chopped cilantro and simmer for 5 - 10 minutes until chicken is cooked through. Serve hot with tortillas
