best homemade tortilla soup Servings based on one cup per serving Ingredients:
1 tbs olive oil |
2 large onions |
8 garlic cloves |
1 tbs salt |
1 tsp cumin |
1/2 tsp red pepper flakes |
12 cups chicken broth |
28 oz diced tomatoes |
2 tbs lime juice |
2 lbs chicken breast |
1 cup cilantro |
1 cup corn |
1/2 cup cheese |
1/2 avocado |
Directions:
1. Marinate: Blocked chicken with 1 juice of lime, 1/3 amount of garlic - for 15 minutes 2. Saute onions, 2/3 amount of garlic 3. Add: salt, cumin and chili flakes 4. Add: broth, tomatoes and half the lime juice and simmer for 20 minutes 5. Puree soup in batches in a blender, return to pot, add chicken and chopped cilantro and simmer for 5 - 10 minutes until chicken is cooked through. Serve hot with tortillas |
