Ingredients:

  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1/4 cup shortening
  • 1 cup sugar
  • 1 large egg
  • 3/4 cup milk
  • 2 cups sour pitted cherries , found in the canned fruit section at grocery stores (drained, save juice)
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 3/4 cup cherry juice

Directions:

  1. Sift together the flour, baking powder and salt.
  2. Add the shortening, sugar, egg and milk.
  3. Beat until smooth.
  4. Add the cherries and pour into greased 9 x 13 pan.
  5. Bake at 350 for 30-40 minutes.
  6. For the cherry sauce, mix together the sugar and cornstarch in a small saucepan.
  7. Gradually stir in 1 cup of boiling water and cherry juice.
  8. Boil for 1 minute stirring constantly.
  9. Remove from heat and add almond extract.
  10. To serve, slice the cherry cake and spoon the cherry sauce over individual slices.
  11. Serve warm.
