  1. Preheat the oven to 450 degrees. Divide the 2 tbsp of butter between the two ovenproof dishes, placing 1 tablespoon of butter in the bottom of each dish.
  2. In a mixing bowl, combine the eggs, flour, milk, sugar and orange juice concentrate, blending thoroughly. Add the melted butter and mix well.
  3. Place the prepared dishes in the preheated oven until the butter in each has melted, but is not browned. Divide the batter between the four hot dishes, return them to the oven, and bake at 450 degrees for about 20 minutes or until puffed and golden.
  4. The 2 peach halves represent the sun
