Broccoli Souffle

Ingredients:

  • 500 g broccoli
  • 1 tsp oil
  • 30 g butter
  • 25 g flour
  • 125 ml milk
  • 2 tbsp cream
  • 4 eggs
  • 100 g cheese

Directions:

  1. Preheat oven to 200°C.
  2. Heat oil, add chopped onion.
  3. Add broccoli rose, bouillon and boil for 15 minutes.
  4. Puree.
  5. Melt butter, add flour, add lukewarm milk. Remove from stove.
  6. Mix egg yolk with cream add to butter mixture also add grated cheese.
  7. Season with salt, pepper and nutmeg.
  8. Beat egg white and mix.
  9. Pour into buttered forms.
  10. Bake for 20-30 minutes.
