Nice colour, light way to enjoy broccoli. Ingredients:
500g broccoli |
1 onion |
1 teaspoon oil |
125 ml vegetable bouillon |
30g butter |
25g flour |
125 ml milk |
2 tablespoons cream |
4 eggs |
100 g cheese |
salt |
pepper |
nutmeg |
Directions:
1. Preheat oven to 200°C. 2. Heat oil, add chopped onion. 3. Add broccoli rose, bouillon and boil for 15 minutes. 4. Puree. 5. Melt butter, add flour, add lukewarm milk. Remove from stove. 6. Mix egg yolk with cream add to butter mixture also add grated cheese. 7. Season with salt, pepper and nutmeg. 8. Beat egg white and mix. 9. Pour into buttered forms. 10. Bake for 20-30 minutes. |
