Ingredients:

  • 3 cups flour
  • 1 tsp salt
  • 1/2 tsp ground nutmeg
  • 1 cup sugar
  • 2/3 cup shortening
  • 2 eggs
  • 1 cup milk
  • 1/2 lb butter
  • 1 1/2 cups sugar

Directions:

  1. Preheat oven to 350°F.
  2. Grease or line with paper 12 muffin cups.
  3. In large bowl, mix flour, baking powder, salt, and nutmeg, set aside.
  4. In separate large bowl, cream together sugar and shortening.
  5. Add eggs to creamed mixture and mix again.
  6. Alternate adding 1/3 of flour mixture and 1/3 of milk to creamed mixture, beating well after each addition.
  7. Fill muffin cups 2/3 full.
  8. Bake 20-25 min, until golden.
  9. Remove from pan and set aside.
  10. Coating:.
  11. Melt butter.
  12. Combine cinnamon and sugar.
  13. Dip warm muffins in butter, coating well.
  14. Roll coated muffin in cinnamon and sugar mixure.
