Ingredients:

Directions:

  1. Cook potatoes covered in 2” boiling water until tender about 12 minutes then drain.
  2. Meanwhile in large bowl whisk together vinegar, oil, water and pepper then mix in apples.
  3. In large nonstick skillet over medium heat toss and brown sausage for 10 minutes.
  4. Remove with slotted spoon then drain on paper towels.
  5. Add potatoes, sauerkraut, onions, parsley and sausage to apple mixture then toss gently.
  6. Season with salt.
