Awesome potato salad sure to please all the potato salad fans out there. Incredible recipe bursting with great flavors. Enjoy Ingredients:
4 medium potatoes thickly sliced |
1/3 cup cider vinegar |
2 tablespoon vegetable oil |
2 tablespoon water |
1/4 teaspoon pepper |
1 cup diced tart red apples |
1 pound polish sausage sliced |
10 ounces sauerkraut rinsed and thoroughly dried |
1/4 cup sliced green onions |
1/4 cup chopped parsley |
1 teaspoon salt |
Directions:
1. Cook potatoes covered in 2” boiling water until tender about 12 minutes then drain. 2. Meanwhile in large bowl whisk together vinegar, oil, water and pepper then mix in apples. 3. In large nonstick skillet over medium heat toss and brown sausage for 10 minutes. 4. Remove with slotted spoon then drain on paper towels. 5. Add potatoes, sauerkraut, onions, parsley and sausage to apple mixture then toss gently. 6. Season with salt. |
