Bilberry Or Wild Blueberry Ice Cream

Ingredients:

  • makes generous u.s. 1 quart
  • 1 pint small wild blueberries
  • 1/2 cup sugar
  • 2 large egg
  • 3/4 cup sugar
  • 1 cup milk

Directions:

  1. Toss the bilberries/blueberries, sugar and lemon juice together in a bowl.
  2. Cover and refrigerate for 2 hours, stirring every 30 minutes.
  3. Prepare the Sweet Cream Base.
  4. Whisk the eggs in a bowl until light and fluffy, 1 to 2 minutes.
  5. Whisk in the sugar, a little at a time.
  6. Continue whisking until completely blended, about 1 minute more.
  7. Pour in the cream and milk and whisk to blend.
  8. Drain the juice from the bilberries/blueberries into the cream base and blend.
  9. Puree the berries in a blender and stir into the cream base.
  10. Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions.
  11. Our ice cream maker only makes 1 British pint (20 fluid ounces) so we literally halved all of these ingredients to make our ice cream. Adjust the recipe if necessary to suit your ice cream maker. The work is worth the effort.
