Ingredients:

  1. 1. Combine the water, beef, star anise, galangal and sauce in large saucepan; bring to a boil. Reduce heat; simmer, covered, 30 minutes. Uncover; simmer, 30 minutes or until beef is tender.
  2. 2. Place noodles in medium heatproof bowl, cover with boiling water; stand until just tender, drain.
  3. 3. Combine remaining ingredients in medium bowl.
  4. 4. Remove beef from pan; reserve broth. Remove fat and sinew from beef; slice thinly. Return beef to reheat broth just comes to a boil.
  5. 5. Divide noodles among serving bowls; top with hot beef and broth then sprout mixture.
