3 litres (12 cups) water |
1kg gravy beef |
1 star anise |
2.5cm piece (45g) fresh galangal |
1/4 cup (60ml) soy sauce |
250g bean thread noodles |
1 1/4 cups (100g) bean sprouts |
1/4 cup loosely packed fresh coriander leaves |
1/3 cup loosely packed fresh vietnamese mint leaves |
4 green onions, sliced thinly |
1 fresh long red chilli, sliced thinly |
1/3 cup (80ml) lime juice |
Directions:
1. 1. Combine the water, beef, star anise, galangal and sauce in large saucepan; bring to a boil. Reduce heat; simmer, covered, 30 minutes. Uncover; simmer, 30 minutes or until beef is tender. 2. 2. Place noodles in medium heatproof bowl, cover with boiling water; stand until just tender, drain. 3. 3. Combine remaining ingredients in medium bowl. 4. 4. Remove beef from pan; reserve broth. Remove fat and sinew from beef; slice thinly. Return beef to reheat broth just comes to a boil. 5. 5. Divide noodles among serving bowls; top with hot beef and broth then sprout mixture. |
