Ingredients:

  • 2 quarts barberries
  • 3/4 tsp cinnamon
  • 3 tbsp lemon juice
  • 4 cups sugar

Directions:

  1. Slice the oranges into very thin sections and remove the seeds.
  2. Cook the slices in a little water till tender.
  3. Clean and stem the fully ripe barberries.
  4. Crush the fruit with a potato masher and strain the pulp and juice through a strainer to remove the seeds.
  5. Add the juice pulp to the cooked oranges and mix well.
  6. Add the cinnamon, lemon juice and sugar.
  7. Mix well and bring to a boil, then simmer over a low heat till the sauce thickens.
  8. Remove from heat; pour into hot sterile jelly jars and seal.
