Banana and Honey On-The-Go Bread

  1. Preheat the oven to 350 degrees. Spray the loaf pan with vegetable oil cooking spray.
  2. Peel the bananas. Break into 1-inch pieces and place in the small bowl.
  3. In a medium bowl cream the margarine by pressing it against the sides of the bowl with a wooden spoon until it is light and fluffy.
  4. Add the honey to the creamed margarine and continue beating for 50 strokes until the honey dissolves into the margarine.
  5. Add the eggs and milk to the margarine mixture and stir until well blended.
  6. In another medium bowl, mix the flours, baking powder, salt and baking soda until well blended. Set aside.
  7. To prepare the batter, add some of the bananas, then some of the flour mixture to the margarine mixture. Beat until smooth.
  8. Repeat step 7 until all the banana and flour mixture are well mixed with the margarine mixture.
  9. Stir in the walnut pieces.
  10. Pour the batter into the prepared pan and bake for 45 minutes.
  11. Check the bread with a toothpick. If it comes out clean, the bread is done. If not, bake 5 more minutes.
  12. Place on a wire rack to cool for 10 minutes.
  13. Remove from pan by turning upside down over wire rack. Cool completely before serving.
