Baked Goat Cheese With Roasted Vegetable In Phyllo...

Ingredients:

Directions:

  1. Roast the vegeatables and set aside. ( see my recipe recently posted: easy roasted root vegetables recipe as a guide on how to roast vegetables )
  2. Butter each sheet of phyllo until you have 4 layers of phyllo
  3. Cut layers into evenly measure squares of 6 and place each into a muffin tin, crimping edges to form a ruffled look.,
  4. Repeat this process again with 4 more remaing sheets of phllo so you will have 12 muffin tins of phyllo
  5. Bake 350F until baskets are golden
  6. Toss the already roasted onions and peppers with oil oil, salt and pepper and the basil if not already seasoned
  7. Divide among the 12 phyllo muffin cups.
  8. Top each with a round of goat cheese
  9. Return to oven and bake until cheese is soft and slightly toasted for a few more minutes.
  10. To serve:
  11. Drizzle 6 plates with ribbons of the balsamic vinegar. Place 2 baskets on plate over some greens
  12. Top each basket with some chopped grape tomatoes, capers and basil.
  13. Serve warm
