Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease an 8-inch by 4-inch loaf pan.
  3. Sift together the flour, baking powder, ginger, and salt; set aside.
  4. Combine the remaining ingredients and blend thoroughly.
  5. Add the liquid ingredients to the dry ingredients and combine just until blended thoroughly (do not beat).
  6. Spread into the prepared pan.
  7. Bake for 80 minutes, or until a tester inserted in the loaf comes out clean.
  8. Cool on a rack for 10 minutes before removing from the pan.
  9. Yield: 1 loaf.
