This is really tasty, and it's so easy to make! Ingredients:
2 cups whole-wheat pastry flour or all-purpose white flour |
2 teaspoons baking powder |
2 teaspoons ground ginger |
1 teaspoon salt |
2 large eggs, beaten |
1/2 cup brown sugar |
1/2 cup vegetable oil |
3 medium-size tart apples, peeled and cut into 1/2-inch cubes |
1/4 cup apple juice |
1/2 cup raisins -and/or- 1/2 cup unsalted mixed nuts (optional) |
Directions:
1. Preheat oven to 350 degrees. 2. Grease an 8-inch by 4-inch loaf pan. 3. Sift together the flour, baking powder, ginger, and salt; set aside. 4. Combine the remaining ingredients and blend thoroughly. 5. Add the liquid ingredients to the dry ingredients and combine just until blended thoroughly (do not beat). 6. Spread into the prepared pan. 7. Bake for 80 minutes, or until a tester inserted in the loaf comes out clean. 8. Cool on a rack for 10 minutes before removing from the pan. 9. Yield: 1 loaf. |
