  1. In a double boiler, on low-medium heat, melt entire package of Almond Bark Chocolate, until all is melted and smooth with no lumps.
  2. In the meantime while melting chocolate, unwrap plastic from candy canes. Break into pieces. Place candy canes in a food processor. Pulse and grind the candy in processor until in tiny pieces. You may have powder and small chunks but is okay, it's what gives the candy it's pink color. Remove from processor and pour into the melted chocolate, stir thoroughly until well combined. This will make it thick, wet and somewhat lumpy....normal and will turn pink..
  3. 2-different ways for the next step-Choice is up to you: 1) Take 2 tsp size spoons and spoon out peppermint mixture on to a parchment lined pan (like spooning cookie dough) Spacing dropfuls 1 inch apart from each other onto pan. When cooled remove from pan and store in ziploc type bags. Makes 30 + medallions OR 2) Pour mixture onto a jelly roll lined baking pan with foil. Covering bottom and edges of pan. Spread peppermint mixutre evenly. When cooled, turn over pan, remove foil and break into huge pieces. And store ziploc type bags.
