All Year Round Summer Squash Soup

Ingredients:

  • 1 medium onion
  • 2 tsp margarine
  • 1/3 cup 33% cream
  • 1 tsp nutmeg

Directions:

  1. Cut squash in half, brush with margarine and sprinkle with salt and pepper, bake in oven at 350 for 35 minutes
  2. Scoop away from peel and cube into 2 inch pieces
  3. In a large pot saute onions in margarine and add squash
  4. Add vegetable or chicken broth
  5. Bring to a boil
  6. Remove from heat and blend in a blender CAREFULLY in 3 small batches with a tea towel on the lid, place in clean pot as you blend
  7. Place back on low heat and add cream, more salt and pepper and nutmeg
  8. Stir, serve and enjoy!
