1824 Tomati Catsup:the Old Fashoned Way

Ingredients:

  • 9 -10 lbs tomatoes
  • 3 large onions
  • 1/2 cup kosher salt
  • 2 tbsp cloves, ground
  • 2 tbsp black pepper

Directions:

  1. Gather the tomatoes wash & stem them.
  2. Cut them roughly into quarters.
  3. Peel & slice the onions & place both tomatoes and onions,in layers,in a large stockpot.
  4. Sprinkle 3 tablespoons on the salt over the tomatoes, & over low heat, without any water whatsoever stir infrequently while increasing the heat to low-medium as the tomatoes sweat out their juicesfor a hour.
  5. Remove from heat & allow the tomatoes to cool enough to handle.
  6. Strain the tomatoes into a clean pan & return to stove top.
  7. Add the cloves,allspice, black pepper & cayenne & bring to a simmer.
  8. Stir regurally for a hour.
  9. Remove & allow to cool.
  10. Adjust seasonings to taste,then bottle in jars with sealable lids & refrigerate until needed.
