Yankee Maple Corn Muffins

Ingredients:

  • 2 cups flour
  • 3/4 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/4-1/3 cup maple syrup

Directions:

  1. Heat oven to 350 degrees F. Grease muffin cups or use paper liners.
  2. Mix flour, corn meal, baking powder and salt in a bowl.
  3. Whisk eggs and brown sugar in another bowl until smooth. Add milk and maple syrup and whisk to mix. Pour over dry ingredients and add half of the melted butter. Mix just until dry ingredients are moistened.
  4. Scoop into prepared muffin cups. Bake 25 to 30 minutes or until golden brown and firm in the center. Let cool in pan for 5 minutes and brush tops with remaining melted butter.
