White Chocolate Berry Muffins

Ingredients:

  • 1 (8 oz) package cream cheese
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 tsp salt

Directions:

  1. Beat cream cheese and sugar together until blended.
  2. Add eggs one at a time.
  3. Stir in vanilla extract.
  4. In a seperate bowl, combine flour, baking powder and salt.
  5. Add dry mix to cream cheese mix until well blended.
  6. Fold in raspberries and chips.
  7. Preheat oven to 375 degrees.
  8. Fill paper-lined muffin cups 2/3 full with batter.
  9. Bake 20-25 minutes.
  10. Serving and bake time vary with size of muffins- for mini-muffins, bake for approx 10-12 minutes depending on oven strength.
