White Chocolate Apricot Brownies

Ingredients:

  • 2 bars ( 2oz each) white baking chocolate
  • 1/3 cup butter
  • 1/2 cup packed light brown sugar
  • 1/4 teasp. vanilla extract
  • 3/4 cup flour
  • 1/2 teasp. baking powder
  • 1/4 teasp. salt

Directions:

  1. In a saucepan, melt chocolate and the butter over low heat
  2. Stir constantly until all the chocolate is melted
  3. Remove from the heat stir in brown sugar, eggs and the vanilla. set aside.
  4. In a bowl, combine the flour, baking powder, and the salt.
  5. Stir the flour mixture into the chocolate mixture
  6. Combine the apricots, almonds and the coconut...
  7. Stir 1/2 the apricot mix into the batter..
  8. Pour into a greased 9-inch square baking pan.
  9. Sprinkle te remaining apricot mixture on top
  10. Bake at 350'F for 25 minutes or until golden brown
  11. Cool and serve
