Watercress and Apple Salad with Peanut Yogurt Dressing

Ingredients:

  • 1/4 cup plain yogurt
  • 1 tbsp water
  • 1/4 tsp salt
  • 8 cups watercress sprigs (2 to 3 bunches)

Directions:

  1. Cut apples into 2-inch-long matchsticks, then toss with 1 teaspoon lime juice. Whisk together peanut butter, yogurt, water, salt, and remaining 2 teaspoons lime juice, then toss with apples and watercress.
