Ingredients:

  • 1 tsp of finely zested orange peel
  • 1/2 cup of rasins
  • 1/2 cup of cucumber julienned on a bias
  • 1/2 cup of chopped walnuts
  • 1/4 cup of mayo
  • 1 tsp sugar
  • 3/4 cup of whipped cream
  • mixed greens

Directions:

  1. Zest 1t of orange peel
  2. Section orange over bowl to catch juice
  3. Cut each section in half
  4. Reserve 1T of orange juice
  5. In a bowl combine apple, zest, rasins, cucumber,walnuts, and orange
  6. In a seperate bowl blend mayo, orange juice, sugar, and fold in whipped cream
  7. Stir in apple mixture
  8. Plate on top of mixed greens or just eat it separately.
