Ingredients:

Directions:

  1. Prepare tortellini according to package directions. Rinse with cold water and set aside.
  2. Heat olive oil in saucepan over medium heat until shimmering. Add onion and carrot and saute until tender, about 5 minutes. Add garlic and saute until fragrant, about 1 minute more.
  3. Add turkey, chicken broth, tomatoes and tortellini to pan. Bring to a simmer, add basil, then cook 5-8 minutes, until turkey is cooked through.
  4. Serve hot with crusty bread.
