Sweet Rice Pudding

Ingredients:

  • 9 cups water
  • 1 tsp salt
  • 2 1/2 cups rice
  • 4 cups milk
  • 1 cinnamon stick
  • 1 1/2 cups sugar

Directions:

  1. Fill a pot with water and salt and bring to a boil. Add the rice and let it cook for approximately 10 minutes, then drain.
  2. Meanwhile, bring the milk to a boil in a separate pot with the cinnamon stick and lemon rind. As it comes to a boil, add the drained rice. Cook over low heat until the rice begins to soften. Add the sugar, mixing well. Add the egg yolks, mix together quickly, then remove from the heat.
  3. Remove the cinnamon stick and lemon rind.
  4. Place the sweet rice into little serving dishes or one large one. Decorate with the ground cinnamon and serve once the rice has cooled.
